How the afternoon runs
Most hens weekends have one afternoon with nothing in it. A class fills about two hours of that without anyone leaving the house or booking a table.
Everybody gets their own shaker and makes three drinks properly: one shaken, one stirred, and one that looks like more work than it is. Then they drink what they made.
It sits better before dinner than after. The same setup runs as a bar later in the night instead, and some weekends want both.
Six to sixteen is the comfortable size for one bartender. Bigger groups work with a second, they just need more bench.

A station each
Shaker, jigger and strainer per person, laid out before the group walks in.
Three drinks
Picked with you beforehand. The Jalapeño Margarita is usually one of them.
Everything in them
Spirits, fresh juice, syrups made that week, ice and garnish.
The clean-up
Ours. The bench ends up how you found it.
One honest warning, because it comes up. A class before a big night out works. A class after one does not, and nobody has ever been glad they scheduled it that way round.

Questions about hens parties
How many people does it suit?
Six to sixteen with one bartender, more with a second. Under six it works, it just stops being worth the travel for you.
Can we do it at an Airbnb?
Most of them. It needs a bench, a sink and somewhere to stand. Check the house rules on gatherings first, because plenty of the Palm Beach and Avalon listings are strict about it.
What if some of the group isn't drinking?
They make the same three drinks without the alcohol, and those are good rather than a consolation.
Can it be a bar instead of a class?
Yes. The bar is what you can book right now; the class follows when it opens again.
How far ahead should we book?
Saturdays between October and March are the hard ones to get. Everything else has more give in it.
